Beet Salad Over Quinoa



A delicious and refreshing salad! Can make with lots of variations but this is how I made it.

Quinoa seasoned with salt, pepper balsamic vinegar, sage and thyme.

Diced beets, daikon radish, cucumber and red onion. Seasoned with vinegar, sugar, salt and pepper.

Serve chilled. Delicious!

For those low carbers out there that feel like they are missing something.

This is a play on corned beef hash. This is made with diced turnips, ham and onions. Salt and pepper to taste and a couple of over medium eggs. Kevin loved it!

I have a great love for food. I grew up with food being a simple of love. When I go home to see my parents, my father can be found in the kitchen at anytime of the day making delicious foods. My other half calls it a labor of love. I enjoy sharing my cooking. I warn you now, I find recipes not directions but rather guidelines. I find out what the basic ingredients are in a dish and follow my heart on how to make it. I'm trying to new adaptations of recipes for boyfriend who has gone low-carb. Don't worry, I also cook carby food.
